About Organic Bay Leaves

Bay leaves add depth of flavour to soups and sauces. The California variety has a bright green colour and a beautiful long leaf (making them great for craft work), with a strong, slightly astringent flavour. The Turkish bay leaves have a softer, more subtle flavour and are more commonly used in most cooking.

Dried bay leaves can last for a long time, but do eventually lose their flavour. Test yours by bending them slightly - they should have a bit of flexibility, and when you do break them, they should still have an aroma.

I like using bay leaves to give added flavour in any dish that requires long slow cooking - they are particularlly good in vegetable stocks. The only problem I meet with is when the children have been doing craft work that requires leaves.......

Roasted Golden Beetroot, Onion, Garlic and Freekeh Salad Recipe

Summary: Freekeh is made by roasting or smoking whole green or young durum wheat grain, then polishing it to remove the outer shell. It can then be left whole or cracked to varying degrees of coarseness. Combined with roasted beetroot, onion and garlic, raw rainbow cherry tomatoes, fresh herbs and baby spinach, this makes for a delicious, filling grain salad, perfect for lunch or as part of a picnic spread. You could substitute the beetroot for sweet potato or squash, the tomato for cucumber or other fresh vegetables. I include instructions on how to cook freekeh, but ultimately do follow the instructions on your packet, as the amount of water needed and the cooking time will vary depending on how coarse the freekeh is.
