About Whole Mace Blades

Mace is the outer shell of the nutmeg fruit. It has a lighter, sweeter flavour.

Should you open the small, plum-sized fruit of the nutmeg tree, inside you would find the nutmeg protectively covered by the thin, lacy-looking scarlet-coloured shell that we know as Mace. After the Mace is peeled from the shell and dried, its beautiful scarlet colour fades to a light brown. Its flavour is similar to, but more delicate than, the sturdy nutmeg. Mace Blades are used for soups and sauces, and are often found in wine mulling mixtures.

You can substitute nutmeg and Mace for each other in most recipes.

Customer reviews

I made custard tarts and sprinkled some mace on top instead of nutmeg - it really complemented the flavour of the egg custard - I preferred it to the stronger flavour of nutmeg.

Real Foods Vintage Christmas Cake Recipe

Summary: This is our Vintage Christmas Cake recipe, that we used to give out to customers in our stores in the late 70s. Many traditional Christmas cake recipes recommend maturing the cake over 2-3 months, and this one is no exception, although the cake is delicious to eat right away as well. But many recipes are made with a whole host of ingredients that modern bakers today can’t use, be it for health or ethical reasons, such as wheat (containing gluten), or dairy. Our vintage Real Foods recipe allows you to cater for a modern world full of food intolerances and ethical choices that weren’t so prevalent even just a decade ago. Don't just follow this recipe ... Be adventurous and creative ... use coconut, chestnut flour, cashews, hazels, pecans, sunflower or sesame seeds, apple rings or peaches or pears ... just remember to keep proportions of dry goods and liquids correct, and do share your favourite variation with us. HAVE A MERRY CHRISTMAS AND A HAPPY HOGMANAY

Vegetarian Jersey Royals, Spiced Poached Pears and Roquefort Salad Recipe

Summary: Oh, how I wish you could taste this ! Roasted Jersey Royal potatoes, pear wedges simply poached in water and spices, Roquefort, with mixed salad leaves lightly dressed in a garlic mustard dressing. Feel free to use another blue cheese, if you can't get Roquefort. When poaching fruit, sugar is usually added to the poaching liquid, but I find this isn't necessary. I just leave the sugar out, and the fruits show case their natural sweetness. The flavours in this salad just go so well together ! Serves 2 as a main or 4 as a starter.
