Cashews are a creamy delicious nut. They are a very good source of monounsaturated fats (high in oleic acid which promotes good cardiovascular health) and copper, and a good source of magnesium and phosphorus.

I love eating whole nuts rather than broken ones. The taste isn't any different, but somehow the experience is far more satisfying. I have also discovered that you can make a delicious cashew cream by just blitzing these in a Vitamix with some water. Makes a lovely topping for an apple crumble instead of cream or ice-cream.
