Real sourdough is incredibly simple, as befits a method that's thousands of years old. You take some starter, refresh it with several times its own weight of fresh flour and water and let this ferment for some hours until the yeast population has grown. You use most of this dough to make bread by adding more flour, water and salt, and keep a little bit back as your starter for the next batch of bread.

After living in France for nearly four and a half years, surrounded by French artisanal bakeries, it was a huge disappointment to return to England and not be able to find anything resembling the loaves I enjoyed. So I decided to try making my own. This sourdough starter comes with instructions, is easy to use and yesterday I made two delicious organic buckwheat loaves. The starter mix is perpetual - you keep topping it up each time you make a loaf, so the cost of the starter becomes insignificant. The process is easy; no kneading, just brief mixing. I didn't have anywhere warm to leave the dough, but it rose anyway. It takes a long time in elapsed time to make a loaf, but actual time spent preparing is minimal, perhaps 20 minutes maximum in total. In summary, it's very easy to make tasty, healthy bread at home with no special equipment (I just used a casserole dish for one loaf). Ingredients are simply the starter, flour, water and a bit of salt. I'm going to try buckwheat and chestnut next. You can experiment with rye and rice flour, too. Bon appetit!
