About Extra Strong Flour
An Extra Strong Flour milled on the farm at Mungoswells, East Lothian, from wheat which is grown there.
Unlike commercial white flours, Mungoswells' has small darker flecks in it. These are tiny particles of bran, the outer protective skin on a grain of wheat which contains more protein and fibre and adds flavour.
