Low Carb Cauliflower Vegetable Pizza Base Recipe

Can pizza contribute to your 5 (or 7) a day ? Yes. Especially if you swap flour for cancer-fighting cauliflower and make this wheat free, gluten free, grain free, low carb cauliflower pizza base. Of course, many will argue that this is a world apart from a fire oven pizza crust, and they would no doubt be right, but cauliflower pizza crust is actually surprisingly delicious and super quick to make. And a really brilliant idea for those who want to reduce their carbs intake, whilst still enjoying pizza, with the added bonus of cauliflower's health benefits. A square or rectangular cauliflower cut up in small squares would also make great healthy finger food at a party. For a vegan pizza crust, replace every egg with 10g (about 1 tablespoon) chia seeds and 2 tablespoons water, mixed well and allowed to set for at least 30 minutes. Use all vegan toppings and leave out the cheese or use your favourite melting vegan cheese substitute.

Method

  • Preheat the oven to 180C/350F. RAW Cauliflower technique : Put the cauliflower florets in a food processor and pulse until perfectly crumbly. STEAMED Cauliflower technique : Steam the cauliflower for a little under 5 minutes. Allow to cool slightly,  crumble in the food processor, then transfer onto a clean tea towel laid flat. Gather the cloth and twist to wring as much water out as you can. You can get between 1/4 cup and 1/3 cup liquid, or even more, depending on your cauliflower.
  • The steamed cauliflower technique makes for a more chewy and less crumbly pizza base, but the raw cauliflower technique is absolutely delicious, if you are short of time.
  • Add the ground nuts, grated parmesan and eggs or chia gel. Process until well combined. Season with dried herbs and freshly crushed black pepper to taste.
  • Transfer the cauliflower mixture to 1 or 2 baking trays lined with baking parchment, depending on wether you want to make 1 large pizza or small ones.
  • With your clean hands, pat down to flatten and shape into a circle, raising the edges a little, if you like your pizzas with a crust.
  • Bake the cauliflower pizza base(s) for about 15 minutes, until lightly golden.
  • Now add your tomato sauce and the toppings of your choice and return to the oven to bake for another 10 to 15 minutes.
