About Dark Green Speckled Lentils
These Dark Green Speckled Lentils come from Canada and are an attractive dark green colour with blue marbling. There's no need to pre-soak these lentils, so all you need to do is cook them for around 20 minutes.
For cold salads, try mixing green lentils with Sun-Dried Tomatoes, fresh herbs, olive oil and whatever else you like. Or Use just cooked lentils with thyme and roasted garlic. Stir in chunks of goats cheese and serve with wedges of roasted butternut squash. These little green and blue marbled lentils retain their shape on cooking (although not as much of their colour) and have a delicious flavour.

Puy lentils are so much tastier than red ones, although I love red ones too. The veggie shepherds pie with a mixture of both is wonderful.

Great food, value and taste-wise. However I have found grit in these went eating. Be sure and rinse carefully before boiling.
