Tortillas, refried beans and guacamole

2 sheets kombu seaweed, soaked for 20 minutes

For the guacamole
2 large avocados More products
1 lemon, juiced OR More products
2 limes, juiced More products
black pepper to taste
about 125ml chilled coconut milk

For the salsa
4 ripe tomatoes, chopped

half a small onion, chopped More products
half a small bell pepper, chopped More products
1 garlic clove, crushed More products
half a small red chilli pepper, finely chopped, adjust to taste More products

Method

  • Drain the beans and kombu, and put them in a pan or a pressure cooker with ample water. Bring to the boil and cook until the beans are soft, about an hour in a regular pan, and about 20 minutes in a pressure cooker.
  • Once the beans are cooked, add the onion or leek and the garlic. Continue to simmer.
  • Add some soy sauce or liquid aminos, black pepper chilli spice mix if using, and roughly mash the beans mixture.
  • Blend or mash guacamole ingredients together.
  • Mix the salsa ingredients together.
  • Warm the tortillas under a grill.
  • Serve the tortillas, the refried beans, the guacamole and the salsa in separate dishes on the table with some salad and let everyone enjoy making their own wraps.
